Ingredients
  • 2 salmon fillets (6 oz each)
  • 1/4 cup fresh breadcrumbs
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 lb mixed vegetables (broccoli, carrots, bell peppers)
  • Salt and pepper to taste
